COMFORT FOODS

CREAM OF POTATO SOUP

Ingredients

14 small red-skin potatoes, diced large
4 cups water
2 tbsp oregano
1 tbsp crushed red pepper flakes
¼ onion
5 cloves garlic
Salt to taste
2 tbsp flour

Method

Sauté the onions and garlic until for a few minutes in a couple tablespoons of the water. Add the flour, oregano and pepper flakes and stir until a nice paste forms. Add the rest of the water and the potatoes and the salt and cook until potatoes are tender. Place half of the soup in a blender and blend until smooth. Add back to the pot, stir and serve warm with homemade garlic bread.
